Drayton started in 2019, when a line cook and a payments engineer got tired of watching good kitchens lose their Fridays to bad software.
Elena Ortiz ran kitchens in Pilsen for ten years. Every POS she used was built for a shop that sells shoes, with a kitchen printer bolted on. Tickets went missing, the Wi-Fi went down on Saturdays, and the support line opened on Monday.
Marcus Webb spent eight years building card payments at a processor. He knew the offline problem could be solved, because a kitchen never needed the internet to read a ticket.
They started with one restaurant, one rail and a rule that still holds: nothing we build is allowed to make a Friday worse. Today Drayton runs 1,140 restaurants in 31 states, from coffee counters to 200-seat dining rooms.
